6. Why are Rums aged?

Aging is an oxidation process during which chemical changes take place which result in an improvement in the rum's flavour. Oak wood barrels are used because it does not contribute any offensive odours or tastes to the rum during the aging process. The charred wood staves of the barrel actually remove any bad odours in the rum during aging, while also adding some colour to the rum.
